Hello Friends of Leyden Glen Lamb -
It was a beautiful week to be a sheep farmer. Here’s one of the flocks grazing peacefully.
Popping in to remind you that there are only 3 markets left for the Amherst Farmers Market until 2022. We’ll be on the Common from 7:30 til 1:30 today and hope to see you.
The coming chilly weather is calling for some braises, curries and stews. We have lots of stew meat cut from the leg. It is lean and can be quickly made into a stew, grilled on skewers or stir-fried.
If you are looking for long cooking braises, I suggest shoulder chops for any of our recipes that you can find on our website HERE. When I cook anything with shoulder chops, I pull the bones out before serving and then stash them in the freezer. When I have plenty, I run a lamb stock to use in soups and stews.
Here’s one of our very favorite recipes - Moroccan Lamb Stew with Apricots, Raisins and Almonds. Double it up and put it in the freezer for when you can’t bear to cook one night.
Hope to see you Saturday.
Your shepherds,
Kristin and Mark
